Ube Cake Roll

1. Prepare the Cake Batter:
Preheat the oven to 350°F (175°C) and position a wire rack in the middle.
In a measuring glass, combine 1 teaspoon of ube flavor extract with the coconut milk to make 100 ml of liquid.
In a small bowl, whisk together egg yolks, sugar, cake flour, and the oil. Add the milk and ube extract mixture. Mix until smooth and set aside.
2. Make the Meringue:
In a stand mixer, beat the egg whites until frothy. Add cream of tartar and gradually add sugar in three parts, mixing until stiff peaks form. The meringue should hold a firm peak when the whisk is lifted.
3. Combine the Mixtures:
Gently fold about 1 cup of the meringue into the egg yolk mixture using a spatula.
Carefully fold the remaining meringue into the mixture until fully combined. Be gentle to avoid deflating the meringue.
4. Bake the Cake:
Line a 9.5 x 13 inch baking pan with parchment paper (do not grease).
Pour the batter into the prepared pan and tap it on the counter to remove air bubbles.
Bake for 10-15 minutes, checking at 10 minutes with a toothpick for doneness.
5. Roll the Cake:
