– 1 small onion, chopped
– 3 cloves garlic, minced
– 2 cups mushrooms, sliced
– 2 cups fresh spinach
– 1 cup heavy cream
– 1/2 cup chicken broth
– 1/2 cup grated Parmesan cheese
– 1 teaspoon Italian seasoning
– 1/4 teaspoon red pepper flakes (optional)
– Fresh parsley, chopped for garnish
Directions:
1. Season the chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes.
4. Add the sliced mushrooms and cook for 5 minutes until they start to brown.
5. Stir in the fresh spinach and cook until wilted.
