Start preparing the Neapolitan shortcrust pastry with the shortcrust pastry: on the available fountain-shaped baking tray, place the sifted flour and yeast and add the soft butter in pieces, the sugar and the grated lemon zest to the center.

Mix the ingredients together with your fingertips, then, as soon as the butter is incorporated, add the eggs and a pinch of salt. Proceed by manually positioning the handle with the flour on the other side of the center.

The mixture of ingredients and the dough will be slightly sticky: work it for a few seconds with very little flour until you obtain a firm and homogeneous dough. Form a ball, pour the transparent film every now and then and place it in the refrigerator for a while.
