Key Lime Blackberry Cheesecake

Instructions
Step 1: Make the Crust
Preheat the oven to 350ºF (175ºC).
In a medium bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 10 minutes. Remove from the oven and allow to cool.
Step 2: Make the Key Lime Filling
In a stand mixer fitted with a paddle attachment, beat the cream cheese until lightened and creamy.
Gradually pour in the sweetened condensed milk, continuing to beat until smooth.
Add the lime juice, lime zest, and salt. Mix until fully incorporated.
Pour the key lime filling into the cooled crust and bake for 15-17 minutes, or until the filling is set.
Allow the cheesecake to cool for at least 30 minutes before refrigerating for at least 3 hours before serving.
Step 3: Make the Blackberry Topping
In a medium saucepan, heat the blackberries over medium heat until softened and their juices start to release, about 3-4 minutes.
