- In a bowl, beat the egg yolks, sugar and vanilla sugar until they become white.
- Pour in the melted butter and continue beating until the mixture is smooth.
Gradually add the flour and yeast. Start mixing the dough with a spatula, then continue with your hands. Mix the dough well and form a ball. - Divide the dough into 2 smaller balls, wrap each ball in cling film and place in the refrigerator for at least 30 minutes.
- Meanwhile, prepare the yogurt layer: in a bowl, mix the yogurt with the sugar and add the sifted flour, stir to combine. In another bowl, beat the egg whites until they form soft peaks. Add the yogurt mixture and continue to beat until the mixture is smooth.
- Preheat the oven to 180°C/360°F.
- Place a ball of dough in a loose-bottom pan lined with parchment paper. Press the dough firmly into the bottom of the pan. Prick it with a fork to prevent it from bubbling.

- Grate the remaining dough ball over the yogurt layer and bake for 35 minutes.
- Decorate with icing sugar, cut into squares and enjoy!
