Crockpot French Onion Meatloaf with Melted Swiss Cheese


2 eggs
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
2 large onions, thinly sliced
2 tbsp butter
1 cup beef broth
8 slices Swiss cheese
Instructions:
Prepare the Meat Blend: Combine ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire sauce, salt, and pepper in a large mixing bowl. Stir until the mixture is well-blended.
Shape the Loaf: Mold the mixture into a loaf shape and gently place it into your crockpot.
Onion Caramelization: In a medium skillet, melt butter over medium heat. Add sliced onions and let them cook slowly, stirring now and then, until they are nicely caramelized, around 20-25 minutes. Add the beef broth and simmer until the broth is mostly absorbed.
Layering the Meatloaf: Transfer the caramelized onions and broth over the meatloaf in the crockpot.
Crockpot Cooking: Set your crockpot to low and let the meatloaf cook for 6 to 8 hours, checking for doneness as desired.
