Preparation of the zucchini:
Wash the zucchini and cut off the ends.
Cut the zucchini into slices about 1.5 to 2 cm thick.
Marinade (optional):
If you want to add a little more flavor, you can marinate the zucchini before skewing it. Mix the zucchini slices with olive oil, chopped fresh herbs, salt, pepper and lemon juice, to taste. Leave them in the marinade in the refrigerator for at least 30 minutes.
Assembly of the skewers:
Make the skewers by threading a zucchini slice onto each one, alternating with other ingredients such as bell peppers, cherry tomatoes or onions.
Cooking:
The finished skewers can be grilled, pan-fried or oven-fried. If using a grill, remember to heat it up well and lightly brush the skewers with olive oil to prevent them from sticking together. Fry the skewers for a few minutes on each side, until the zucchini is cooked and lightly browned.
Work:
Once cooked, place the zucchini skewers on a plate.
You can add a little fresh olive oil and a pinch of salt and pepper on top of the skewers for an extra touch of flavor.
