In a large bowl, combine the flour and salt.
Add the vegetable oil and warm water.
Knead until smooth, then cover and set aside for 15-20 minutes.
Mash the hot potatoes with a potato masher, then let cool slightly.
Stretch the dough out into a disk.
Top with two-thirds of the vegan cheese.
Add the mashed potatoes and more vegan cheese.
Pinch the edges of the dough together to seal the filling.
Flatten the flatbread with a rolling pin.
Add a little vegetable oil to a cast iron skillet or griddle over medium heat. Fry the flatbread for 5 minutes, then flip and fry for another 5 minutes.
Slice and serve.
