Summer Shrimp Salad


1 tablespoon Old Bay seasoning
1 tablespoon Kosher or sea salt
2 tablespoon black pepper corns
Bouquet garni- Lemongrass, parsley, and fresh dill
Directions:
Place all of the above ingredients in a soup pot over medium heat and let simmer for 20 minutes.
Add the shrimp, and cook for 4 minutes- strain and place in the refrigerator.
2 cups small dice English cucumber
1 cup diced red onion
1/2 cup each diced red, yellow and orange peppers
1 bunch chopped dill
Lemon-Honey Vinaigrette
