1. Add the potatoes into the pot with water and run to a boil. Let them boil for 30 minutes. Then remove from the water and set aside to cool.
2. In a bowl with minced meat add the salt, pepper, parsley, egg, and breadcrumbs and mix all together well.
3. When the potatoes are cooled cut them in half and remove the inner part. Transfer them to the baking tray covered with parchment paper and por the olive oil on top.
4. Add cheese cubes to each potato half and close with meat. Pour olive oil on top and cover with grated cheese.
5. Transfer the stuffed potatoes to the oven and bake at 180°C/360°F for 40 minutes.
