Strawberry Crunch Banana Pudding Recipeย 


4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Crunch Layer:
1 1/2 cups crushed strawberry-flavored cereal (like Strawberry Crunch)
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
For Assembly:
4-5 ripe bananas, sliced
Whipped cream (store-bought or homemade)
Instructions:
1. Prepare the Banana Pudding:
In a medium saucepan, whisk together the sugar, cornstarch, and salt.
Gradually whisk in the milk until smooth.
Cook over medium heat, whisking constantly, until the mixture thickens and begins to boil.
In a small bowl, whisk the egg yolks. Gradually add a few spoonfuls of the hot milk mixture to the yolks, whisking constantly.
Slowly pour the egg yolk mixture back into the saucepan with the remaining pudding, whisking continuously.
Continue to cook for 2-3 minutes until the pudding is thickened.
Remove from heat and stir in the butter and vanilla extract.
