STEAK BITES WITH GARLIC BUTTER AND CHEESE-CRUSHED POTATOES.

Step 1: Prepare the potatoes
Preheat the oven to 425°F (220°C).
Place the new potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15 minutes.
Drain the potatoes and transfer them to a baking sheet.
Using the bottom of a glass or a mashed potato, gently press each potato to flatten it slightly.
Drizzle the potatoes with olive oil and season with salt and pepper.
Bake in the preheated oven for 20 to 25 minutes, or until the potatoes are crisp and golden.
Step 2: Add the cheese
Remove the potatoes from the oven and sprinkle with grated cheddar cheese.
Return to the oven for another 5 minutes or until the cheese is melted and bubbly.
Step 3: Make the garlic butter

In a small saucepan, melt 2 tablespoons unsalted butter over medium heat.
Add the minced garlic and cook until fragrant, about 1 minute.
Drizzle the garlic butter over the mashed potatoes and garnish with the chopped fresh chives. Keep warm.
Step 4: Cook the Steak Bites
While the potatoes are baking, season the steak bites with salt and pepper.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add the steak bites to the skillet in a single layer. Cook for 2 to 3 minutes per side or until desired doneness. Remove the steak bites from the skillet and set aside.
In the same skillet, add the remaining 4 tablespoons unsalted butter and the minced garlic. Cook until fragrant, about 1 minute.
Return the steak bites to the skillet and toss to coat with the garlic butter sauce.
Cook for another 1-2 minutes to heat everything through.
