How to Make Sicilian Potato Pancakes
Step 1
Wash the potatoes and boil them in salted water until tender; this will take about 40 minutes1.

Once the potatoes are cooked, drain them, peel them while they are still hot and mash them using a potato masher or a fork in a bowl.3.

Add the breadcrumbs and work again until you obtain a soft but compact and not too sticky dough.5. Cover with cling film and refrigerate for at least half an hour.
