RECIPE GRATINATED POTATOES IN BÉCHAMEL SAUCE

Ingredients:  4 medium potatoes, peeled and thinly sliced, 2 cups milk, 4 tablespoons butter, 4 tablespoons flour, salt and pepper to taste, 1 cup grated cheese (you can use cheddar, mozzarella or your favorite cheese), nutmeg to taste (optional), chopped fresh parsley for garnish (optional).

Preparation:  Prepare the Potatoes:  Peel the potatoes and slice them thinly. You can use a mandolin to obtain uniform slices.  Cook the Potatoes:  Cook the potato slices in salted water until tender but not fully cooked. This usually takes about 5-7 minutes.  Make the béchamel sauce:  In a small saucepan, melt the butter over medium heat. Add the flour and stir constantly to make a roux. Cook for a few minutes until it is lightly golden in color. Gradually add the milk, stirring constantly to avoid lumps. Cook until the sauce thickens. Add salt, pepper and nutmeg to taste.  Assemble the gratin potatoes:  In a baking dish, arrange a layer of potato slices. Pour some of the béchamel sauce over the potatoes. Sprinkle a layer of grated cheese. Repeat until all the potatoes are in the pan. Finish with a layer of cheese on top.  Gratinate:  Preheat the oven to 200°C. Bake the potatoes until golden brown and bubbly, usually about 20-25 minutes.  Serve:  Remove from the oven and let stand for a few minutes before serving. Sprinkle with chopped fresh parsley if desired. And done! Now you can enjoy delicious gratinated potatoes with béchamel sauce. Enjoy!
