Prepare the potatoes: Wash the potatoes thoroughly and prick them several times with a fork. Cook the potatoes in a pot of boiling water for about 15-20 minutes until done.
Prepare the meatballs: In a bowl, mix the minced meat with the onion, garlic, egg, breadcrumbs, salt and pepper. Form small balls (the size of a walnut).
Fry the meatballs: Heat a pan with a drizzle of oil and fry the meatballs until golden brown. Reserve.
Prepare the tomato sauce: heat a drizzle of oil in the same pan and sauté the onion and garlic until soft. Add the drained cherry tomatoes and season with basil, salt and pepper. Let the sauce cook for about 10 minutes until it thickens a bit.
Core the potatoes: Carefully cut the boiled potatoes in half and scoop out the insides with a spoon, leaving a border of about 1 cm.
Prepare the filling: mix the inside of the potato with the fried meatballs. Optionally you can also add grated cheese.
Stuff the potatoes: Pour the ground meat and potato mixture evenly into the hollowed-out potato halves.
Cooking: Arrange the stuffed potatoes in a baking dish and pour the tomato sauce over them. Bake in a preheated oven at 180°C for about 20-25 minutes until the cheese has melted and the potatoes are lightly browned.
Serve: Serve the stuffed potatoes with the meatballs in tomato sauce and garnish with fresh herbs if desired. Enjoy!
