500g 00 flour
250 g potatoes (weight after cooking and chopping)
300 ml warm water
50 ml extra virgin olive oil (plus extra for topping)
10 g of fine salt
1 teaspoon of sugar
10 g fresh brewer’s yeast (or 3 g dry brewer’s yeast)
Coarse salt to taste
fresh rosemary to taste
