Add sugar and lemon zest to a suitable bowl and mix. Add eggs and beat until foamy. Add sunflower oil, lemon juice and milk and mix.
Add sifted flour and yeast and mix.
Pour the cake mixture into a cake tin greased completely with oil. Pour a small amount of strawberry jam on top.
Bake in an oven preheated to 180 degrees.
Remove the cake from the oven and serve, spreading jam on top and sprinkling with coconut flakes.
