Preheat oven to 200°C and line a baking sheet with parchment paper.
In a large bowl, combine the diced potatoes with the salt, black pepper, paprika, dried garlic and a little olive oil. Mix the seasoning well into the potatoes until each piece is evenly coated. Make sure the seasoning is evenly distributed to enhance the flavour of each bite.

Spread the seasoned potatoes in a single layer on the prepared baking sheet and bake in the preheated oven for 20 minutes or until golden brown and crispy on the outside and tender on the inside.
While the potatoes are baking, prepare the filling. In a separate bowl, whisk together the eggs and cream until smooth and well combined.
Add the finely chopped green onion to the egg mixture and mix.
Once the potatoes are cooked, remove them from the oven and reduce the oven temperature to 180°C (350°F).
Transfer the baked potatoes to a baking dish and pour the egg mixture over the top, making sure to evenly cover the potatoes.
Spread the halved cherry tomatoes and sliced sausages over the egg mixture, then sprinkle with the grated cheese.
Place the prepared baking dish in the preheated oven and bake for about 15 to 20 minutes. Keep a close eye on it and remove from the oven when the eggs have set and the cheese has turned golden and bubbly.
Remove the dish from the oven and leave to cool for a few minutes before serving.
Garnish with chopped parsley and serve hot. Enjoy a delicious and satisfying potato dinner!
