* 1 puff pastry
* 1 shallot
* 3 tablespoons of crème fraîche
* salt pepper
* 4 slices of bacon
* 1/2 log of goat cheese
* 1 egg yolk for gilding
Preparation :
1/ Peel and slice the shallot. Cut the bacon slices into pieces.

2/ Put the crème fraîche in a bowl. Add salt, pepper, shallot and bacon. Mix well.
4/ Place a small pile of cream mixture in the center of each.
5/ Cut the goat cheese into slices and place one on each puff pastry.
6/ Fold the 4 corners of each dough rectangle over the filling then seal the edges.
7/ Brush the puff pastry with egg yolk and bake for 20 minutes at 200° without preheating the oven.
8/ Pour a drizzle of honey over the puff pastry when serving.
