Potato, courgette and sausage pie

1-The first thing to do to prepare the potato, zucchini and sausage flan is to wash the potatoes, remove the peel, cut them into pieces and boil them in plenty of water. Drain the potatoes, put them in a large bowl and mash them with a potato masher.

2-Add the salt, the white pepper, the milk and mix everything.

3-In the meantime, cook the roughly chopped courgettes, crumbled sausage and shallot in a non-stick pan, it will take about 10 minutes. Season with salt.

4-Add the courgettes and sausages cooked in a pan to the potato mixture. Add the grated cheese, the mozzarella cut into pieces and mix everything with a wooden spoon.

5-Pour the mixture into the ceramic baking pan, mine measures 30 x 20 cm, and level it well with the help of the wooden spoon.

6-Add the butter in small pieces on the surface of the flan and cook in a static or fan oven at 190 °C for about 45 minutes. The flan is ready when it is golden brown on the surface.

7-Once cooked, we wait about half an hour before cutting it.
