- Cook the potatoes : Peel the potatoes, cut them into pieces and boil them in salted water until they are soft. Drain them and mash them with a potato masher or a fork until you obtain a smooth puree.
- Make the dough : In a large bowl, combine the mashed potatoes, flour, egg, grated cheese (if using), salt, baking powder, and herbs. Knead until the dough is soft and slightly sticky. Add a little more flour if necessary to achieve the desired consistency.
- Form the bread : Divide the dough into portions depending on the desired size of the bread. Shape each portion into a ball and then flatten slightly to form discs.
- Pan frying : Heat the olive oil in a nonstick pan over medium heat. Cook the dough discs for about 3-4 minutes per side, until golden and crispy on the outside.
- Serving : Serve the potato bread warm, perhaps accompanied by cheeses, cold cuts or a sauce of your choice.
