Step 1
Leave the potato in plenty of salted water for 30 minutes, then it will not allow you to pierce it with a fork, which will make frying easier; in the meantime, let the spinach wilt in a pan, then drain them to eliminate the excess water.

Squeeze the spinach well and chop it with a knife, then transfer it to a large bowl.

Mash the potatoes in the bowl with the spinach.

Add the grated parmesan, a pinch of salt and pepper.
