Potato and bacon pancake: easy, quick and delicious

Prepare the potatoes:
Peel the potatoes, cut into cubes and boil in salted water until soft but not falling apart. Drain well.
Cook the bacon:
In a non-stick pan, fry the bacon cubes until golden and crispy. Drain on absorbent paper to remove excess fat.
Prepare the pastry:
In a large bowl, mash the cooked potatoes with a fork or potato masher until smooth.
Add the cooked bacon, grated cheese, lightly beaten eggs, milk, salt and pepper. Mix all ingredients well until smooth.
Prepare the flan:
Grease a baking tin with butter or oil (you can use a square or rectangular tin).
Pour the potato and bacon mixture into the pan, smoothing it out with a spatula.
Cooking:
Preheat the oven to 180°C.
Bake the flan and cook for about 30-40 minutes or until the top is golden and crispy.
Take part:
After cooking, let the flan rest for a few minutes, then cut into portions. Serve hot.
Tip:
You can enrich the flan by adding fresh, aromatic herbs to the potato mixture, such as thyme or chopped parsley.
If you prefer a lighter version, you can replace the whole milk with semi-skimmed milk or plant milk.
This dish is suitable as both a side dish and a main course, possibly accompanied by a fresh green salad.

Potato pancake with bacon is the perfect dish for a tasty and satisfying dinner. Enjoy your meal!
