Step 1
First wash the potatoes well under running water, then dry them and cut them into thin slices of about 1 centimetre, without removing the peel.

Place them in a large bowl filled with water and let them rest for at least half an hour, so that they lose the excess starch.

Now heat the grill or griddle and arrange the potatoes without overlapping them; the ideal cooking temperature would be 160°C, but in general the grill should be very hot and not scorching, to avoid burning them. Turn them every 5 minutes to cook them evenly and remove them from the heat when they are golden on both sides.

At this point, transfer them to a container or serving dish and season them with extra virgin olive oil, salt, pepper and rosemary.

The grilled potatoes are ready to be enjoyed: serve them hot with your favourite second courses
