METHOD

1. Add eggs and sugar to a bowl and mix until sugar dissolves and mixture becomes foamy. Sift in flour and baking powder and beat until well combined.

2. Grate lemon zest, add lemon juice and continue beating until the mixture is compact.
3. Pour the mixture onto a baking sheet lined with baking paper, place in the oven and bake at 180°C for 25 minutes.
4. After baking, line the base with baking paper and leave for 10 minutes.
5. Unroll and spread jam with a spoon, covering the entire bun, spread nuts on one side and roll up.
6. Decorate the bun with icing sugar, cut into slices and serve.
