Pancake Recipe

  1. Prepare the dry ingredients : In a large bowl, sift together the flour, sugar, baking powder, and salt.
  2. Prepare the wet ingredients : In another bowl, beat the eggs and mix them with the milk, melted butter and vanilla extract (if using).
  3. Combine the ingredients : Pour the liquid ingredients into the bowl with the dry ingredients. Mix gently with a whisk or wooden spoon until the mixture is smooth. It is normal for there to be some lumps, do not overmix or the pancakes will be tough.
  4. Heat the pan : Heat a non-stick pan over medium heat and grease it lightly with a little butter.
  5. Cook the pancakes : Pour a ladle of batter into the hot pan for each pancake. Cook until bubbles begin to appear on the surface and the edges look dry, then flip the pancake with a spatula and cook for another 1-2 minutes on the other side, until golden brown.
  6. Serving : Serve pancakes warm, stacked on top of each other, and accompanied with toppings of your choice such as maple syrup, honey, fresh fruit, yogurt, or Nutella.
