- Prepare the dry ingredients : In a large bowl, sift together the flour, sugar, baking powder, and salt.
- Prepare the wet ingredients : In another bowl, beat the eggs and mix them with the milk, melted butter and vanilla extract (if using).
- Combine the ingredients : Pour the liquid ingredients into the bowl with the dry ingredients. Mix gently with a whisk or wooden spoon until the mixture is smooth. It is normal for there to be some lumps, do not overmix or the pancakes will be tough.
- Heat the pan : Heat a non-stick pan over medium heat and grease it lightly with a little butter.
- Cook the pancakes : Pour a ladle of batter into the hot pan for each pancake. Cook until bubbles begin to appear on the surface and the edges look dry, then flip the pancake with a spatula and cook for another 1-2 minutes on the other side, until golden brown.
- Serving : Serve pancakes warm, stacked on top of each other, and accompanied with toppings of your choice such as maple syrup, honey, fresh fruit, yogurt, or Nutella.
