PAKORA INDIAN DRITTERS

1. Chop half the onion, bell pepper, green chili, garlic cloves and fresh cilantro. Reserve.

2. In a bowl, combine all-purpose flour, rice flour, yogurt, baking soda, chili flakes, cumin, and chopped vegetables. Season with sea salt and mix well adding water gradually to get pakora dough. Let rest for 15 minutes.

3. Meanwhile, prepare chutney (optional): Place all chutney ingredients, except tomato puree and chilli flakes, into the food processor and process until blended. Pour the received mixture into the bowl with tomato puree, add the chili flakes and stir to combine.

4. Heat the oil in a frying pan over medium heat. Add several tablespoons of batter to the hot oil and fry for about 4 minutes until golden and crispy. Repeat, frying the remaining mixture in batches.

5. Arrange pakora and chutney (optional) on a platter and serve immediately.
