Finely chop the chili pepper and add it to the pan with the onion. Do the same with the pepper.
Cut the meat into pieces, beef and pork, and mince it.
In a bowl mix the minced meat, the vegetables cooked in the pan, the breadcrumbs, the eggs and the pepper. Knead well with your hands to combine all the ingredients.
Finally add the salt and the chopped fresh parsley.
Cut the mozzarella into slices.
With your hands form mini meatloaves with the meat mixture obtained and before closing them place a slice of mozzarella in the center.
Coat the mini meatloaves in breadcrumbs, making sure they adhere well to their entire surface.
Heat the oil in a pan, then fry the meatloaves until golden brown on both sides.
Arrange them on a baking sheet and bake at 200 degrees for 30 minutes.
