Separate the yolks from the whites and collect them in a planetary mixer.

Add sugar

Beat until light and fluffy

Add vanilla seeds and a pinch of salt

In the meantime, beat the egg whites until stiff with 4 drops of lemon juice.

Gradually add egg whites to the mixture

Always mix gently from the bottom up so as not to break the mixture.

Pour the mixture into a 20 cm square baking tin lined with baking paper.

Bake at 160°C for 55 minutes

Remove from oven, let cool and refrigerate for about 2 hours. Once ready, cut into squares

Place the squares on a plate and sprinkle with some powdered sugar.
