Jam Filled Cupcakes

Preheat the oven to 350°F (180°C) and prepare a cupcake pan with paper liners.
In a medium bowl, combine the flour, baking powder, and salt. Reserve.
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the vanilla. Add
the flour mixture to the butter mixture in thirds, alternating with the milk, starting and ending with the flour mixture. Mix until well combined, but do not overmix.
Fill each cupcake pan about 2/3 full with the batter.
Bake the cupcakes in the preheated oven for 18 to 20 minutes or until a toothpick inserted into the center of the cupcake comes out clean.
Let the cupcakes cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Once the cupcakes have completely cooled, you can make a hole in the center of each one using a small knife or an apple corer.

Fill each hole with your favorite flavor of jam.
To make the frosting, beat the butter until light and fluffy. Gradually add the powdered sugar and milk, beating until desired consistency. Add food coloring if desired.
Pipe the frosting over the cupcakes using a piping bag or spatula.
Decorate the cupcakes with additional items if desired, such as sprinkles, sprinkles, or fresh fruit.
