- Potato preparation : Wash the potatoes, peel them and cut them into pieces. Cook them in boiling salted water until they are tender (about 15-20 minutes). Drain them and mash them with a potato masher or a fork until you obtain a smooth puree. Let them cool.
- Dough preparation : In a bowl, mix the mashed potatoes with the cooked ham, grated cheese, egg, a pinch of salt, black pepper and a little nutmeg, if desired. Mix well until the mixture is smooth. If the dough is too soft, add a little breadcrumbs.
- Forming the croquettes : Take a small amount of dough and shape it into a cylinder or ball, according to your preference. Continue until you run out of dough.
- Breading : Pass each croquette first in the flour, then in the beaten egg and finally in the breadcrumbs, making sure they are well coated.
- Frying : In a deep frying pan, heat the oil for frying. When it is very hot, fry the croquettes a few at a time until golden and crispy, turning them often. This will take about 3-4 minutes. Drain on paper towels to remove excess oil.
- Service : Serve the ham and potato croquettes hot, perhaps accompanied by a sauce of your choice such as mayonnaise, ketchup or a yogurt sauce.
