Grandma’s Cauliflower Fritters

Start by washing the cauliflower and cutting it into small florets. Boil or steam the cauliflower until tender, then let it cool and lightly mash it with a fork.
In a large bowl, combine the cauliflower puree, finely chopped onion, parsley, eggs, breadcrumbs, cornflour, oregano, paprika, Italian herbs, baking soda, grated cheese, salt and pepper. Mix well until all the ingredients are evenly incorporated.
Heat a generous amount of olive or vegetable oil in a skillet over medium heat.
Scoop the cauliflower mixture into small balls and form them into small patties. Carefully place the patties into the hot oil.
Fry the patties until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels to remove excess oil.
Serve the donuts warm, garnishing with additional parsley if desired.
