5. Assemble the lasagna: In a 9×13-inch baking dish, start by spreading a thin layer of the white sauce on the bottom. Place 3 lasagna noodles on top, then layer with ricotta cheese, some shrimp scampi, fresh spinach (if using), and a sprinkle of mozzarella cheese. Repeat this process for two more layers, finishing with a final layer of lasagna noodles. Pour the remaining white sauce over the top and sprinkle with the remaining mozzarella and Parmesan cheese.
6. Bake: Cover the lasagna with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for an additional 20 minutes until the cheese is golden and bubbly.
