Fried Calamari: The Method to Make Them Crispy on the Outside and Soft on the Inside


Preparation:

1. After washing them well, cut the squid into slices and place them in a bowl.
2. Add baking soda and water/soda.
3. Leave them to soak for 15/30 minutes.
4. Rinse them under running water, then pass them in flour.
5. Before frying them, rinse them in a solution made up of equal parts water and vinegar.
6. Fry in boiling oil for 1/2 minute, drain well from the oil and season with salt.
