Instructions:
Make the mixture:
In a bowl, whisk together the eggs and sour cream until smooth.
Add the flour and baking soda and continue to whisk until the mixture is well combined and free of lumps. Season with a pinch of salt and ground black pepper.
Add the toppings:
Add the diced sausage, grated cheese and diced tomatoes.
Add the chopped parsley and mix well.
Make the breakfast:
Heat a skillet over medium heat and lightly grease with a drizzle of oil or butter.
Pour the egg mixture into the skillet, spreading it evenly.
Cook for about 5-7 minutes or until the bottom is set and golden brown.
Carefully flip the mixture, if possible, to cook the other side, or cover the skillet with a lid and continue to cook until the top is set and the cheese is melted.
Serve:
Once cooked, slide the breakfast onto a plate.
Garnish with additional fresh parsley if desired.
