Preheat oven and prepare pan:
Preheat oven to 180°C. Grease a 24cm baking tin with butter and flour.
Prepare mine:
Peel and thinly slice the apples. Place the apple slices in a bowl and sprinkle with lemon juice to prevent them from darkening. Set aside.
Beat eggs and sugar:
In a large bowl, beat eggs and sugar until light and fluffy.
Add liquid ingredients:
Add melted butter to beaten eggs and sugar and mix well.
Add dry ingredients:
Sift flour, baking powder, cinnamon and salt. Add dry ingredients to liquid mixture and mix until smooth.
Add nuts:
Add chopped walnuts to mixture and mix gently.
Add apples:
Add about two thirds of apple slices to mixture and mix to distribute evenly.
Pour mixture into pan:
Pour mixture into prepared pan and smooth with spatula. Arrange the remaining apple slices decoratively on top of the cake.
Bake the cake:
Place the cake in the preheated oven and bake for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
Cool and decorate:
Leave the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. If desired, sprinkle the top of the cake with icing sugar before serving.
Serve:
Slice the cake and serve. The cake is delicious on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
