Chocolate  Wafer Icebox Cake


Ingredients
3 cups heavy cream
3 tablespoons sugar
1 tablespoon vanilla extract
2 packages (9 ounces each) Nabisco chocolate wafers
Unsweetened cocoa powder (optional)
Instructions
Whip the Cream: In a large bowl, beat the heavy cream, sugar, and vanilla extract with an electric mixer on high speed until soft peaks form.
Prepare the Base: On a flat serving plate, spread a thin layer of whipped cream to help hold the bottom layer of cookies in place.
Assemble the Cake: Arrange 7 cookies side by side in a circle on the plate, placing 1 cookie in the center. Spread about 2/3 cup of whipped cream on top of the cookie layer, forming a 7-inch circle.
Layer the Cake: Repeat the layering process with the remaining cookies and whipped cream, making 11 or 12 layers of cookies and ending with a layer of cream (there will be a few cookies left over).
