1. Prepare the cream by beating the eggs with the sugar, then add the starch and warm milk. 2. Now heat the mixture in a saucepan, stirring until thickened. 3. Remove from the heat, add the finely chopped chocolate, melt well and leave to cool. 4. Pastry: In a saucepan, combine the water, milk, butter and salt. Bring to the boil and add the honey. 5. Add the flour and cook, stirring constantly, until completely absorbed. 6. Leave to cool and add the eggs one at a time. 7. Shape the eclairs using a pastry bag and bake in the oven preheated to 180° for 35 minutes. 8. Fill with the previously prepared chocolate cream. 9. For the icing: melt the chocolate in the hot cream and decorate it.
