CHOCOLATE BRIOCHE DOUGHNUTS

Step 1: Prepare the yeast
Start by whisking the warm milk and warm water with a little sugar in a bowl. Then add the fresh yeast to the mixture and stir until completely dissolved. Leave this mixture aside for about 10 minutes.
Step 2: Mix the dough
In a large bowl, add an egg, vegetable oil, flour, salt and the rest of the sugar. Stir well to combine all the ingredients, then work the dough for about 10 minutes until it is soft and elastic.
Step 3: Rest the dough
Form the dough into a ball, then cover it with cling film. Leave to rest for about 1 hour, until it doubles in volume.
Step 4: Shape the donuts
Once the dough has doubled in size, roll it out into a large rectangle on a lightly floured surface. Brush the surface with soft butter and fold it in half. Dust it lightly with flour, then roll it out again into a rectangle.
Step 5: Cutting and Resting
Cut the dough into 12 equal strips, then shape each strip into a donut as shown in the attached video. Place the donuts on a baking tray lined with baking paper. Leave them to rest for another 30 minutes to allow them to puff up again.
Step 6: Preheating and filling
Preheat the oven to 180°C (350°F). Beat an egg in a bowl and use it to brown the tops of the donuts. Sprinkle the chopped dark chocolate generously over each donut.
Step 7: Baking
Place the donuts in the preheated oven and bake for about 20 minutes, or until golden and cooked through.
