Chicken Preparation:
Cut the chicken breast into cubes about 2-3 cm on each side.
Marinade:
In a large bowl, mix together the yogurt, crushed garlic, lemon juice, paprika, cumin, turmeric, salt and pepper.
Add the chicken cubes and mix well to coat well with the marinade.
Cover the bowl with cling film and leave to marinate in the fridge for at least 1 hour (preferably 2-3 hours or overnight).
Breading:
In a bowl, mix together the breadcrumbs and grated parmesan.
Kebab and bread:
Remove the marinated chicken cubes and skewer them onto wooden skewers (previously soaked in water to prevent burning) or metal skewers.
Dip each skewer in the breadcrumb and parmesan mixture, pressing down lightly to ensure the breadcrumbs adhere well.
Cooking:
Preheat the oven to 200°C.
Place the skewers on a baking sheet lined with baking paper.
Spray or lightly brush the skewers with olive oil.
Bake in the preheated oven for about 20-25 minutes, turning halfway through, until the chicken is cooked through and the breading is golden and crispy.
Work:
Once cooked, set the skewers aside for a few minutes before serving.
Serve the chicken skewers with a sauce of your choice (such as yogurt sauce, barbecue sauce, or tzatziki sauce) and a side of fresh vegetables or salad.
Suggestions:
Cooking variation: The skewers can also be grilled or fried in a non-stick pan lightly greased with olive oil, turning frequently to brown evenly.
Add flavorings – Add herbs such as thyme, rosemary, or oregano to the breading for extra flavor.
Cooking check: Make sure the chicken is cooked through by checking that the juices that run clear and that the internal temperature reaches at least 75°C.
