Grate the zucchini and squeeze it with your hands to remove excess moisture.
Add the shredded chicken breast, parmesan, ham, garlic, egg, salt and pepper to a large bowl.
Add the breadcrumbs.
Mix until all ingredients are completely combined.
Scoop the mixture up with a spoon and use your hands to create a doughnut shape. Coat the chicken zucchini fritters with more breadcrumbs.
Drizzle some extra virgin olive oil in a nonstick skillet over medium-low heat. Place the chicken fritters in the skillet and cook for about 10 minutes on each side.
Cook until golden brown and cooked through.
To avoid fat, drain the chicken and zucchini fritters on a paper towel-lined plate. Serve and enjoy!
