To make the bread:
Preheat the oven to 200°C.
Slice the baguette or rustic bread into 1-2cm thick slices.
Place the bread slices on a baking sheet and lightly brush with olive oil.
Toast the bread slices in the oven for about 5-7 minutes, until golden and crispy.
To make the sausage:
In a frying pan over medium heat, heat a little olive oil.
Add the whole garlic cloves and fry until golden, then remove.
Add the crumbled sausage to the pan and fry until golden, breaking up any lumps with a wooden spoon. Season with salt and pepper to taste.
To assemble the Bruschetta:
Spread the cooked sausage evenly over the toasted bread slices.
Grate or thinly slice your chosen cheese and place on top of the sausage.
Cook the bruschetta:
Return the bruschetta to the hot oven and bake for another 5-7 minutes or until the cheese is completely melted and lightly browned.
Participate:
Remove the bruschetta from the oven and, if desired, garnish with chopped fresh parsley for added color and freshness.
Serve the bruschetta hot.

The bruschetta can be enhanced with other ingredients such as roasted peppers, caramelized onions, or sautéed mushrooms.
For a spicy flavor, add a few red pepper flakes to the sausage while it is cooking.
