Birria Wings with Consome

1. Make the glaze, in a small bowl, whisk together the sauces, sesame oil and ginger.

2. Trim excess skin from the edges of the wings.

3. Brush or drizzle lightly with oil and season with salt and pepper to taste.

4. Grill the chicken wings over direct medium heat until the skin begins to crisp, about 10 minutes, turning once or twice.

5. Brush the wings with the glaze and continue grilling until the meat is no longer pink at the bone, 8 to 10 minutes, turning and brushing with the glaze 2 or 3 times.

6. Serve hot.

You can also choose to cook the wings at 375 for 45 minutes, then spread the sauce and

cook again at 400 for 20 minutes until the skin is golden and the sauce thickens
