Baklava Cheesecake Sandwich Cookies
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
Beat in the egg and vanilla extract until fully combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the bottom of a glass.
Sprinkle the tops with the chopped pistachios and walnuts. Press them gently into the dough.
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
To prepare the filling, mix together the softened cream cheese, honey, and vanilla extract until smooth.
Once the cookies are completely cool, spread a generous amount of the cream cheese filling on the bottom of one cookie and sandwich it with another.
Drizzle the tops of the sandwich cookies with honey and sprinkle with additional chopped pistachios and walnuts.
