Cut the potatoes into quarters, leaving the peel.
Mix the breadcrumbs, oregano, rosemary, salt, pepper and chopped parsley.
Separately beat the eggs with a pinch of salt.
Pass the potato wedges first in the egg and then in the mixture of breadcrumbs and aromatic herbs.
Arrange them on a baking tray covered with baking paper and drizzle with a little olive oil.
Bake at 200° for about 40 minutes.
