Apple pie

✅Preparation:


Peel the apples and cut them into thin slices.
Arrange them on a plate and sprinkle them with the juice of half a lemon so that they do not blacken.
Prepare a quarter by mixing the sugar and softened butter in the bowl of a stand mixer.
Then add the egg yolks and the sifted flour with the baking powder and vanilla.
Finish by delicately adding the egg whites beaten until stiff with a pinch of salt.
Butter your tart pan
Line your tart pan with butter and a little icing sugar (this is my little trick for having a nice colorful and crunchy cake)
Pour the cake mixture into the lined pan and level the surface with a spatula.
Arrange all the apple slices on the cake.
Bake for about 30 minutes at 210°C (20 minutes at 210°C then 10 minutes at 190°C for me)
The cake will be cooked when a knife blade comes out dry from the cake and it is golden brown
Leave the cake to cool on a wire rack.
In the meantime prepare the neutral icing and brush the tart with it when it has cooled.
