Apple Preparation:
Peel, core and finely dice the apples.
Pastry Preparation:
In a large bowl, cream together the softened butter and brown sugar until creamy.
Add the egg and continue to mix until well combined.
Add the sifted flour, baking powder, cinnamon and a pinch of salt. Mix until smooth.
Add the apple cubes and gently mix with a spatula to distribute evenly over the pastry.
Form the cookies:
Prepare a baking sheet lined with baking paper.
Pinch off small portions of the dough (about a heaped tablespoon or two) and roll into balls.
Place the balls on the baking sheet, leaving some space between them as they will rise slightly during baking.
Cooking:
Preheat the oven to 180°C (fan assisted).
Bake the apple cookies in the preheated oven for about 12-15 minutes or until the edges are golden brown.
Once baked, let the cookies rest on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Work:
If desired, sprinkle the cookies with a little powdered sugar before serving.
