Air Fryer Peanut Butter Lava Cookies

1/2 cup packed brown sugar
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
Instructions:
In a small bowl, combine the creamy peanut butter, powdered sugar, and 1/2 tsp vanilla extract until smooth. Roll the mixture into small balls (about 1 tsp each) and place them on a parchment-lined baking sheet. Freeze for at least 30 minutes.
Melt the semisweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Allow to cool slightly.
In a medium bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, and salt.
In a large bowl, beat the softened unsalted butter, egg, and 1 tsp vanilla extract until creamy. Gradually mix in the dry ingredients until well combined.
Flatten a tablespoon of the cookie dough in your hand, place a frozen peanut butter ball in the center, and wrap the dough around it, sealing it completely.
Preheat your air fryer to 350°F (175°C).
Arrange the dough balls in a single layer in the air fryer basket, ensuring space between each one.
Air fry at 350°F (175°C) for 8-10 minutes, or until the cookies are golden brown and set.
Let the cookies cool slightly before serving.
Enjoy the warm, melty centers of these Air Fryer Peanut Butter Lava Cookies as a delightful treat!
