- Preparing the peppers:
- Wash and cut the peppers into strips.
- Pour a little vegetable oil into a pan and add the chopped onion.
- Fry over medium heat until the onion becomes soft and transparent.
- Add the peppers, season with salt and pepper, and cook until the peppers are tender and slightly caramelized. Set aside.
- Cooking the chicken:
- In a larger pan, pour some vegetable oil and heat it over medium-high heat.
- Add the chicken pieces and fry until golden and crispy on both sides.
- Season the chicken with salt and pepper and simmer until well cooked and juicy. Set aside.
- Preparation of the dressing:
- In the same pan in which you cooked the chicken, add a minced garlic clove, chili pepper to taste and a few sprigs of rosemary.
- Add the chopped tomatoes and cook over medium heat, stirring occasionally, until the sauce thickens and the flavors blend.
- Mixing the ingredients:
- Add the prepared peppers to the tomato sauce and mix well.
- Return the chicken pieces to the pan and mix everything together, making sure the chicken is well coated in the sauce.
- Finish:
- Let it simmer for a few minutes to allow the flavors to blend.
- Taste and adjust salt and pepper if necessary.
- Service:
- Transfer everything to a serving dish and serve hot.
- You can accompany the dish with crunchy bread or a side dish of your choice.
