One-Pot Pepper & Chicken Rice Recipe

Ingredients

  • 8 pieces bone-in, skin on chicken drumsticks and/or thighs
  • 1 1/2 tsp Salt
  • 2 tbsp Avocado oil
  • 1 tsp Smoked paprika
  • 1 tsp Ground black pepper
  • 2 tbsp salted butter
  • 1 large sweet oniondiced
  • 1 large red bell pepperdiced
  • 5 to 6 garlic clovesminced
  • 3 tbsp diced sun-dried tomatoesin oil
  • ½ cup diced roasted bell pepper
  • 1 to 2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp EACH dried: thyme, rosemary, oregano, parsley, basil
  • 1 ½ cups Jasmine rice
  • 2 ½ cups chicken broth
  • 2 tbsp freshly chopped parsley
